Abstract

The FoodMASTER Food and Nutrition (FAN) Cards provide an innovative approach to integrating applied mathematics and science through food-based learning activities designed for elementary classrooms. Developed with support from SEPA and in partnership with Love a Sea Turtle, the FAN Cards offer hands-on, inquiry-based modules across nine sections, including Measurement, Food Safety, Vegetables, Fruits, Grains, Protein, Dairy, Fats & Oils, and Meal Management. Each card aligns with Common Core Mathematics and Next Generation Science Standards, encouraging students to explore fractions, mass, volume, states of matter, and biological diversity through engaging culinary experiments. For example, the “Kitchen Math!” and “Gallon Lab!” activities guide learners to apply proportional reasoning, data collection, and unit conversions in real-world food contexts, while the “Healthy Hands!” and “Movin’ Microbes!” activities connect biology and public health concepts to daily routines. The interdisciplinary design supports cross-curricular STEM literacy and emphasizes experiential, problem-based learning that promotes both academic understanding and life skills. Preliminary classroom trials indicate increased engagement, conceptual retention, and positive attitudes toward STEM among grades 3–5 students. This presentation will discuss the theoretical underpinnings of the FAN Cards, their connection to constructivist and experiential learning models, and best practices for implementation in classroom and informal learning environments. Future directions include adaptation for early childhood and special education contexts as part of the LSU Geaux-To Center’s Keep a Beat initiative.
